Our Story
We’re a family from Parma, Italy. For over 30 years, our dad has worked as a pizza chef, perfecting his craft and inspiring us to share our love for authentic Italian food.
Opening a restaurant has always been our dream, and in 2025, we made it a reality by bringing a true taste of Italy to London. From the very first dough we prepared to every carefully selected topping, our goal has always been simple: to share the flavours we grew up with and the pizzas we all love so much.
Using only the finest D.O.P ingredients imported from Italy, we are proud to welcome you to Nuovo Gusto — where family tradition meets passion, and where we strive to serve the best pizza in London.
The Restaurant
Our dreams came true this 2025, when we opened our first pizzeria, Nuovo Gusto, in the heart of London. Our cozy space is designed for friends and family to gather, enjoy authentic flavours, and create lasting memories.
Thanks to the love for real Italian pizza, we’re already planning to bring Nuovo Gusto to more locations across Central London. Every pizza is made with passion and recipes inspired by my dad’s 30+ years as a pizza chef in Italy.
Our Dough
At Nuovo Gusto, everything starts with the dough. Made in the true Neapolitan style, our dough rests for 24 hours and has a 67% hydration, giving it the perfect balance of flavour and texture.
Unlike the usual soft and chewy Neapolitan pizza, ours stands out for its crispy crust, golden on the outside yet soft and light on the inside. This perfect texture comes from years of experience and craftsmanship, perfected by our pizza chef’s expertise in creating the ideal bake every single time.
Fresh Ingredients
We believe that every great pizza begins with great ingredients. That’s why at Nuovo Gusto, we use only the finest Italian D.O.P products (Denomination Protected Origin) imported directly from Italy to ensure authentic flavour in every bite.
From our rich tomato sauce to our creamy mozzarella, every ingredient is carefully selected for its quality and freshness. It’s this dedication to genuine Italian produce that gives our pizzas their signature taste — simple, honest, and full of flavour.
